Whether you’re a fan of sweet, savoury, or a combination of the two, there are tonnes of tasty toppings to create the perfect pancake feast. Put the perfect twist on your pancake recipe this year with Breville’s potato pancakes. Topped with crispy pancetta and sweet maple syrup, this tasty treat is the ideal option to serve both those with a sweet tooth or a savoury lover.
Potato Pancakes with Crispy Pancetta and Maple Syrup
Prep time 30 minutes
Cook time 25 minutes
- 3 medium sized potatoes, cooked and mashed, roughly 250g.
- 100g flour
- ½ tsp baking powder
- Salt and pepper
- 1 x 100g pack of pancetta slices
- Maple syrup
- Breville crepe maker
Place the mashed potato into a bowl. (if you are using any leftover potato, heat in a microwave to soften) Tip in the flour, baking powder and the salt. Mix together until the mixture forms a soft dough.
Shape into a ball and then tip out onto a lightly floured surface. Break 8 smaller balls off the dough, shape and flatten slightly to produce a small round cake. The potato cakes can be made up to this point 1 day ahead and chilled.
Cook the pancetta slices until golden and crispy.
Heat the crepe maker on setting 4. Wipe over the surface with a little oil. Cook the potato cakes 4 at a time for approx 5-6 minutes, turning to ensure even browning, repeat with the remaining 4.
Serve stacked on a warm plate, topped with the crispy pancetta and drizzled with maple syrup. This recipe is also delicious with some banana slices or ripe figs too.
