Make a statement in the kitchen this Shrove Tuesday with our delicious pancake recipe courtesy of Breville

Treat yourself to a mid-morning brunch with these American-style light and fluffy pancakes. The classic pancake recipe is getting a new twist – and it’s a yummy one. This breakfast of champions is perfect for the sweet-tooth lover; so move over lemon and sugar, here comes the rocky road revival!

Ingredients you’ll need:

  • 100g plain flour
  • 2 medium eggs
  • a pinch of salt
  • 1/2 tsp sugar
  • 300ml milk
  • 25g cocoa powder, sifted
  • melted milk chocolate or homemade chocolate sauce
  • toppings: marshmallows, fruit, melted chocolate & chocolate biscuits or brownie pieces

Method for the perfect pancakes:

  1. Gently heat the butter, chocolate and condensed milk over a low heat until thick and smooth, add the milk and stir to your desired consistency. Set aside until required.
  2. Place all the batter ingredients apart from the cocoa into a food processor or blending jug and process until smooth. Set aside.
  3. Heat the Breville® Crêpe Maker on setting 3. Place a large ladle of the batter mix onto the hot plate and cook both sides until lightly browned. The pancake should ideally be ½ to 1cm thick.
  4. Repeat until all the mixture is used, you should have 4 pancakes.
  5. Set aside to cool. Then chill for approx 1 hour.
  6. Place the cocoa into the remaining batter mix, along with 1 tbsp sugar and blitz using a hand blender or whisk until smooth.
  7. Make a chocolate crepe following the instructions above, again this should ideally be ½ to 1cm in thickness.
  8. Set aside to cool, then chill for approx 1 hour.
  9. Using a round template (a suitable cup or glass or cardboard circle can be used) cut out 8 rounds, 4 from each pancake. Discard the surplus.
  10. Spread a little chocolate sauce or melted chocolate onto the surface of a white cut out pancake, top with a chocolate pancake, spread a little chocolate sauce onto the chocolate pancake and top with a white pancake, repeat these layers building a stack, until you have 1 remaining chocolate pancake.
  11. Carefully lift the pancake and position on top of the stack, drizzle with melted white chocolate.
  12. Serve with a jug of the hot chocolate sauce.
  13. Cover the remaining chocolate pancake in chocolate sauce/melted chocolate and top with all your favourite confectionery as suggested above.
  14. Carefully lift the pancake and position on top of the stack, drizzle with melted white chocolate.
  15. Serve with a jug of the hot chocolate sauce.
