Perfect pancake day recipes

Flip Flip hurray, it’s finally pancake day! No one can judge you for eating the same thing for breakfast lunch and dinner because today all the rules are off the table and you can eat all the pancakes you want. Whether you’re a folder or a stacker, a flipper or a dropper Shrove Tuesday is the day to experiment with flavours and create some masterpieces.

The Classic crepe

This crepe is bananas, b-a-n-a-n-a-s, you can’t have a pancake day guide without this classic crowd pleaser. Whether you prefer the subtle sugar and lemon or the overindulgent chocolate sauce and fruit this is always a pancake day hero in any household.

To make these pancakes, mix together 100g plain flour, 2 eggs, 300ml milk until you make a thick but slightly runny mixture, melt 1 tbs of butter in a pan over medium heat and add a spoonful of the mixture. Cook until both sides are slightly brown, and then add your toppings. Enjoy!

Brunch honey

The ultimate brunch dish just got even better with this savoury pancake stack. Maple pancakes, with bacon eggs and a hash brown, its the perfect pancake for anyone craving something different this year.

To recreate these American style pancakes you will need to mix together 200g self-raising flour, 1 1/2 tsp baking powder, 3 eggs and 200ml of milk together to create a thick gloopy mixture. Your pancake will be smaller and thicker and take slightly longer to cook through to the middle so wait for bubbles for from before you flip them over.  Then you can top with bacon, maple syrup, fried egg and even hide a hash brown in between the layers.

The protein power up

These healthy protein blueberry pancakes are packed full of nutritious ingredients like coconut, almond and flax. These are the perfect kickstart to your day or a post-workout snack,  so serve them with your choice of nut butter to pack in the protein and pump up the flavour.

Mix together a scoop of protein powder, 1 egg, some almond milk and 1 tsp of baking powder, when the mixture is about ready to flip add the blueberries to create these bursting little pockets of purple goo. Serve with fresh banana and nut butter.

Fruity pancake stack

These fluffy American style pancakes are enough to get those taste buds tingling especially when paired with sticky sweet golden syrup or for a more indulgent taste, layer on the Nutella and enjoy.  You can create these using the same recipe as the ‘Brunch honey’ however skip the hash browns and  top with all the fruit, berries and golden syrup.

Pancakes make people happy and these lemon and blueberry pancakes will instantly put a smile on your face. Not only are they easy on the eyes but they are also a healthier option for anyone who still wants to enjoy pancake day but not break the diet. Blueberry infused pancakes with greek yoghurt and fruit compote what’s more to love?

You will need 2 bananas (mashed) 2 eggs some vanilla extract, lemon juice and some oat flour to thicken the mixture.  Cook these the same as normal and serve with whipped Greek yoghurt, blueberries and lemon rind.
